Seasonal Stimulations with Simple Squash Soup-

Simple, quick, nutritious, and delicious please… Ever hear these words come out of your mouth when discussing making meals for your family? I have a great recipe for you that is all 4.

Summer is coming to an end and fall is around the corner. It’s a transitional time for the seasons and our bodies are connected to this transition. To support our body during this time, it is beneficial to strengthen the stomach. According to Chinese Medicine, the stomach is nourished best by the sweetness of foods, in particular foods with a golden color. Squash, ginger, papaya, and yams are good examples.

We are blessed to live on Maui where the ability to grow these foods is quite simple. Whether you choose to grow your own or buy LOCAL organic produce at our Health Food Stores or our weekly Farmer’s Markets, your food will be more nutritious and most likely more delicious than the food that is shipped, radiated, and possibly sprayed from the mainland.

So inspire yourself and others, and experiment with this simple, quick, nutritious, and delicious recipe that correlates with the season, strengthens your stomach and supports our island’s sustainability.

SIMPLE SQUASH SOUP
Print Recipe
Add all the ingredients in a large soup pot. Simmer on med-low for 40 minutes with a lid, stirring occasionally. Make extra and keep in the fridge for the following day. Enjoy!

Ingredients
  • 1 medium butternut squash Chopped into bite size pieces.
  • 6-8 cups coconut milk Blend coconut water and coconut meat to desired consistency or purchase 1-2 cans of organic coconut milk and mix with the same amount of pure water to equal 6-8 cups- 1 can = 2.5 cups.
  • 2-3 cloves garlic Chopped or minced.
  • 1/2 onion Chopped.
  • 1/2 inch ginger Chopped.
  • pinch sea salt
  • pinch cayenne pepper
