Cranberry Vinaigrette
- 1 1/2 cups fresh cranberries
- 3/4 cup organic apple juice
- 1/4 cup pure maple syrup Grade B.
- 1/3 cup extra virgin olive oil
- 1 tbsp dijon mustard
- 1 tsp sea salt
- 1/2 tsp freshly ground pepper
Kale salad
- 1 bunch lacinato Kale Chopped into small pieces.
- 1 bunch curly green or purple kale Chopped into small pieces.
- 2 organic crisp apples Such as Braeburn, Gala or Granny Smith, sliced.
- 1 cup hazelnuts Toasted at 350 degrees for about 12 minutes (after nuts have cooled, place them in a clean dish towel and gently rub them to remove their brown skins).
