SIMPLE SQUASH SOUP
Add all the ingredients in a large soup pot. Simmer on med-low for 40 minutes with a lid, stirring occasionally. Make extra and keep in the fridge for the following day. Enjoy!

Ingredients
  • 1medium butternut squashChopped into bite size pieces.
  • 6-8cups coconut milkBlend coconut water and coconut meat to desired consistency or purchase 1-2 cans of organic coconut milk and mix with the same amount of pure water to equal 6-8 cups- 1 can = 2.5 cups.
  • 2-3cloves garlicChopped or minced.
  • 1/2 onionChopped.
  • 1/2inch gingerChopped.
  • pinch sea salt
  • pinch cayenne pepper
