    Preheat oven to 350 degrees. Peel and chop ginger fine. Prep egg substitutes * Listed per egg: 1 TBsp ground flaxseed mixed with 3 TBsp water (for health nutters), 1/4 cup apple sauce mixed with 1/2 tsp of baking powder, 1/4 cup soft tofu mixed with 1/2 tsp baking powder, or just use more bananas for more sweetness! Combine dry ingredients in bowl 1. Combine wet ingredients in bowl 2. Mix both together. Pour into pans. Bake for 50 minutes, test with toothpick. Finally sprinkle on coconut flakes (optional) and aloha when there’s 10 minutes left. Enjoy!
