In a blender combine the coconut meat with just enough water to blend until smooth. Then add the maple syrup, vanilla, salt, and cinnamon (and/or cacao powder) and blend until thoroughly mixed. Transfer to covered bowl and refrigerate for 2 hours or until pudding sets. Enjoy this creamy treat on its own, as a topping for waffles, or as a dip for strawberries!

Ingredients
- 2 tbsp water Filtered.
- 3 medium aged coconuts (Too young has no meat and when too old, meat is hard) Ideally the meat will be ¼ - ½ inch thick and easy to spoon out of the shell.
- 1.5 tbsp maple syrup Grade B.
- 1/4 tsp sea salt
- 1 cap full vanilla extract
- 1/2 tbsp cinnamon powder
- 1 tbsp cacao powder Optional.
