    1. Combine slaw ingredients with 1/2 cup of cold filtered water and chill in fridge. Bring to a boil dressing ingredients. 2. Next soften 1 envelope unflavored *vegetarian gelatin in a ¼ cup of cold water, set aside. 3. Then Mix together dressing in a saucepan... and bring to boil. 4. Stir in softened gelatin. Remove from heat and let cool until slightly thickened (about 20 minutes at room temperature). Since temperatures vary all over the island keep your eye on it visually, it really needs to be slightly thick before proceeding. 5. When cool, beat mixture well with a whisk. Gradually stir in ¾ cup of your favorite salad oil for 2 minutes by hand. 6.Drain cold vegetables of water. Pour dressing over and mix lightly until all vegetables are coated. Chill in fridge. Salad stays crispy until ready to serve. Enjoy!
