1. Combine slaw ingredients with 1/2 cup of cold filtered water and chill in fridge.
Bring to a boil dressing ingredients.
2. Next soften 1 envelope unflavored *vegetarian gelatin in a ¼ cup of cold water, set aside.
3. Then Mix together dressing in a saucepan... and bring to boil.
4. Stir in softened gelatin. Remove from heat and let cool until slightly thickened (about 20 minutes at room temperature). Since temperatures vary all over the island keep your eye on it visually, it really needs to be slightly thick before proceeding.
5. When cool, beat mixture well with a whisk. Gradually stir in ¾ cup of your favorite salad oil for 2 minutes by hand.
6.Drain cold vegetables of water. Pour dressing over and mix lightly until all vegetables are coated. Chill in fridge. Salad stays crispy until ready to serve. Enjoy!

- 2 cup grated carrots
- 8 cup shredded cabbage
- 1 thinly shredded green pepper
- 2 medium small diced onions I prefer white.
Dressing ingredients
- 3/4 cup coconut palm sugar
- 1 cup white vinegar
- 1 tbsp caraway seeds
- 1 tsp celery salt
- 1 tsp dry mustard
- 1 1/2 tsp sea salt
- 1 1/2 tsp ground black pepper
- 1 envelope unflavored vegetarian gelatin * Special note. This recipe can use the traditional supermarket household brand gelatin. Directions may differ, depending on which brand you choose to use, this recipe is recommended to use vegetarian gelatin for The Mauimama. Just make sure you follow the directions with each brand as it may have its own special directions.
