Thanksgiving side dish

Thanksgiving is a great time to get with family and friends and eat one of the best meals of the year! It is a beautiful way to get together and share. I love how everyone normally contributes a dish, working together as the whole ohana congregates to give thanks for friendship and life and what ever else may be on your list that year.

Tyua Sereda submitted this great 2 kale salad recipe which is sure to be a hit if you have been asked to bring the greens, and may even be a salad the kids will enjoy!

Kale is packed with iron, magnesium, folate, vitamin K, vitamin A, vitamin C, antioxidants and fiber. It has more calcium in it than milk and more iron than beef, and is filled with omga-3 fatty acids which help fight against arthritis, asthma and autoimmune disorders. All hail Kale it is a great nutritional power house!

Cranberries also hold their own packing in protective phytonutrients, flavonoids and phonlic acids (which act as anitioxidants in the body). They have been used for decades for the prevention and treatment of urinary tract infections but are now also being recognized for their anti-cancer properties and ability to lower “bad” LDL cholesterol.

The old saying, “an apple a day keeps the doctor away” also has truth behind it as apples are also packed with vitamins and nutrients and are an excellent source of B-complex vitamins. Granny Smith apples also have a higher acid content than other apples, which will keep them from going brown as quick. This is great if your salad won’t be eaten for a few hours.

Ingredients
Cranberry Vinaigrette
Kale salad
  • 1 bunch lacinato Kale Chopped into small pieces.
  • 1 bunch curly green or purple kale Chopped into small pieces.
  • 2 organic crisp apples Such as Braeburn, Gala or Granny Smith, sliced.
  • 1 cup hazelnuts Toasted at 350 degrees for about 12 minutes (after nuts have cooled, place them in a clean dish towel and gently rub them to remove their brown skins).
