Mauimama recipe mock chicken tofu

I think the nutritional yeast love affair started shortly after I got pregnant. I was doing some research on which foods were good to add to my diet and discovered this powerhouse. Nutritional yeast is rich in folic acid, 18 amino acids, 15 minerals, B-12 vitamins (this is what makes it yellow) and for the vegans and veggies among us is choked full of protein. It is not to be confused with brewers yeast and is not yeast forming in the body. It is commonly grown on beet sugar and molasses, fermented and then dried and has a cheesy nutty taste.

It is great for kids of all ages. I put it in the scrambled eggs, on top of the eggs, on every pasta dish, pizza, heck, anything I put cheese on really. It is awesome on popcorn and makes for a key ingredient in a mean mock chicken tofu, see recipe below.

It goes great with Bragg’s Liquid Aminos. A personal favorite is toast and avocado with the nutritional yeast and liquid aminos on top and the boys love it too. It also melts into any sauce if you need to disguise it.

1. Drain tofu and press in paper towel to remove excess water. Set aside. 2. Heat oil in a frying pan on med-high heat. Add the tofu by breaking it into bite-sized pieces. Saute the tofu until golden brown on each side for 2 to 3 minutes. 3. Add the soy sauce (or Liquid Aminos) and sea salt. 4. Turn off the heat and add the nutritional yeast and ground black pepper to taste. Stir until all the tofu is coated with yeast.
